Ingredients
- 3 Large eggs
- 3 tbsp. lowfat milk
- 1 tbsp. parsley
- Dash grnd nutmeg
- 1 tbsp. butter
- 1 sm. apple, cored & minced
- 1/4 c. shredded Cheddar or possibly Monterey Jack cheese
Directions
- Beat Large eggs, lowfat milk, parsley and nutmeg with a fork; set aside. In medium skillet heat butter; add in apple. Cook 2-3 min till tender. Add in egg mix. Cook without stirring till mix just begins to set on the bottom and around the edges.
- Using a large spatula, lift and fold partially cooked Large eggs so uncooked portion flows underneath. Continue cooking and gently folding about 3 min till Large eggs are cooked throughout. Remove from heat. Sprinkle with cheese. Makes 2 servings.
