Directions

  1. Beat Large eggs, lowfat milk, parsley and nutmeg with a fork; set aside. In medium skillet heat butter; add in apple. Cook 2-3 min till tender. Add in egg mix. Cook without stirring till mix just begins to set on the bottom and around the edges.
  2. Using a large spatula, lift and fold partially cooked Large eggs so uncooked portion flows underneath. Continue cooking and gently folding about 3 min till Large eggs are cooked throughout. Remove from heat. Sprinkle with cheese. Makes 2 servings.
