Ingredients
- 3 c. carrots, grated
- 6 soda crackers, rolled
- 1/2 c. celery, minced
- 1 tbsp. onion, minced
- 3 Large eggs, hard boiled & diced
- 3 tbsp. lemon juice
- 3/4 c. salad dressing (mayonnaise type)
- 1/2 c. peanuts, grnd (if you like)
Directions
- Combine above ingredients. Mix lemon juice, salad dressing and nuts, if using. Add in to carrot mix. Stir to mix. Serves 8.
