Ingredients
- 3 c. mashed cooked sweet potatoes
- 1/4 c. butter (or possibly butter)
- 1 tbsp. butter
- 1/3 c. orange juice
- 1/3 c. minced onions
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon dry leaf tarragon
- 4 Large eggs, separated
Directions
- Beat sweet potatoes with electric mixer till smooth in a large mixing bowl, beat in 1/4 c. butter and orange juice. In a small skillet heat 1 Tbsp. butter. Add in onions and cook till tender, add in salt, pepper and tarragon. Add in to sweet potatoes, beat in egg yolks.
- In a large mixing bowl, beat egg whites till stiff but not dry. Fold into sweet potato mix. Turn into a greased 1 1/2 qt baking dish. Bake in 375 degree oven for 50 min or possibly till mix puffs and is lightly brown. Serves 6.
