Ingredients

  • 1 c. Yellow cornmeal
  • 1 c. Flour
  • 1/4 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Salt
  • 1 can (15 1/4 oz) Del Monte FreshCut Whole Kernal Gold & White Corn, liquid removed*
  • 1 can (14 3/4 oz) Del Monte Fresh Cut Cream Style White Corn**
  • 1/2 c. Butter or possibly margarine, melted
  • 1/4 c. Lowfat milk
  • 2 x Large eggs, beaten

Directions

  1. Combine first five dry ingredients in a large bowl; mix well.
  2. Combine corn, butter, lowfat milk and Large eggs. Pour into flour mix, stir just sufficient to blend.
  3. Pour into 12 large, greased muffin c.. Bake in a preheated 400 F oven, 15 - 20 min or possibly till golden, or possibly bake in 8-inch square pan for 25 -30 min.
  4. May substitute any other Del Monte FreshCut Whole Kernal Corn
  5. May substitute any other Del Monte FreshCut Cream Style Corn
