Ingredients

  • 1/2 tsp dry thyme
  • 1/4 tsp dry rosemary
  • 1/2 tsp black peppercorns
  • 1/4 tsp white peppercorns
  • 1 tsp coriander seeds
  • 3 x plain goat cheese buttons (small rounds, abt 2 ounce ea), halved horizontally
  • 1 c. extra-virgin extra virgin olive oil - (to 1 1/4 c.)
  • 2 x bay leaves
  • 6 x thin slices French bread toasted lightly
  • 6 x sun-dry tomatoes packed in oil

Directions

  1. With a mortar and pestle, or possibly by hand, crush thyme and rosemary. Transfer herbs to a small bowl and stir in peppercorns and coriander seeds.
  2. In a 1-pint jar, carefully place 3 cheese halves and sprinkle with half of herb mix. Add in remaining cheese and sprinkle with remaining herb mix. Add in sufficient oil to cover cheese completely and slide bay leaves down opposite sides of the jar. Cover jar tightly and chill, covered (4 days).
  3. Let mix come just to room temperature and preheat broiler.
  4. Top each bread slice with a tomato and a marinated cheese half and arrange on a baking sheet. Broil about 4 inches from heat till cheese is golden brown, about 3 min.
  5. This recipe yields 6 servings.
