Ingredients
- 1 c. Buttermilk
- 2 x Large eggs
- 1 Tbsp. Veg. oil
- 2 Tbsp. Brown Sugar
- 1/2 tsp Baking Soda
- 1 tsp Baking Pwdr
- 1/2 c. Rice Flour
- 1/2 c. Potato Flour
- 1/4 c. Corn Meal pn Salt
Directions
- Place Lowfat milk, Large eggs and Oil in Blender. Blend at low speed. Add in Sugar and Dry Ingredients. Pour 6" rounds into greased skillet or possibly non-stick pan. Flip when bubbles appear through out and edge of `cake looks dull. Add in more lowfat milk for thinner pancakes or possibly more flour for thicker ones.
