Ingredients

  • 3 tbsp. veg. oil
  • 2 beaten Large eggs
  • 1/2 c. diced fully cooked ham or possibly raw pork
  • 1/4 c. finely minced fresh mushrooms
  • 1/4 c. thinly sliced green onion
  • 4 c. cooked rice, chilled
  • 3 tbsp. soy sauce

Directions

  1. In a 10 inch skillet heat 1 Tbsp. of the oil. Add in beaten Large eggs and cook without stirring till set. Invert skillet over a baking sheet to remove cooked Large eggs. Cut them short, narrow strips. In the same skillet heat the remaining oil.
  2. Cook ham or possibly pork, mushrooms and green onion in the warm oil for 4 min or possibly till mushroom and onions are tender. Stir in cooked rice and the egg strips. Sprinkle with 3 Tbsp. soy sauce. Heat through, tossing gently to coat with soy. Serve with additional soy sauce if you like.
