Glazed Pork With Sauteed Cabbage Recipe

  • 1 Tbsp. extra virgin olive oil
  • 4 x loin pork chops, 1" thick Coarse salt Freshly-grnd black pepper
  • 8 sprg fresh thyme
  • 1 x orange halved
  • 1 Tbsp. cognac
  • 3 x Gravenstein apples peeled, cored, and cut into 1/4" slices
  • 1 tsp sugar
  • 2 Tbsp. clarified butter
  • 2 x garlic cloves thinly sliced
  • 1/2 tsp caraway seeds
  • 1/4 lrg savoy cabbage (to 1/2) cored, sliced thin Coarse salt Freshly-grnd black pepper

Directions

  1. Heat extra virgin olive oil in a large skillet over medium-high heat. Season the pork on both sides with salt and pepper. Place 2 sprigs thyme on each pork chop and add in to the skillet. Saute/fry till browned, about 3 to 5 min.
  2. Turn the chops over and squeeze the juice from half an orange over the pork. Reduce the heat to medium and squeeze the remaining orange half over the pork. Cover and continue cooking till an instant read thermometer reads 160 degrees, about 10 to 15 min. Remove to a platter and cover to keep hot.
  3. Remove skillet from the heat, and add in the cognac (this prevents flare-ups). Return the skillet to medium heat, and cook for about 1 minute. Add in the apples, and cook till caramelized and tender, about 5 to 7 min. Season with salt and pepper to taste, and sprinkle with sugar. Stir well to coat the apples. Serve immediately with the pork chop and sauteed cabbage.
  4. SAUTEED CABBAGE: Heat the clarified butter in a large skillet over medium heat. Add in the garlic and cook till fragrant, about 30 to 45 seconds. Add in the caraway seeds and toast lightly, stirring constantly till aromatic, about 30 to 45 seconds. Add in the cabbage, reduce the heat to medium-low and season with salt and pepper. Cook till soft and golden brown, about 10 to 15 min. Adjust seasonings, and serve immediately.
  5. Makes 4 servings.
