Ingredients
- 2 quart. cans sweet potatoes
- 3/4 c. brown sugar
- 3/4 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1/2 c. butter
- 3 large eggs, slightly beaten
- 3/4 c. crushed, liquid removed pineapple
- 1/2 to 1 c. lowfat milk
- 1/2 to 1 c. minced pecans
Directions
- Thoroughly heat sweet potatoes with liquid, drain. Using hand mixer mash sweet potatoes and add brown sugar, cinnamon, nutmeg, butter, large eggs, pineapple and lowfat milk. Put into a greased 2 qt casserole dish and top with the minced pecans. Bake at 350 degrees for 45 min.
