Ingredients

  • Most of the time when baking gluten free I use my own blend of flours. The recipe for that is:
  • 1 cup of sorghum flour
  • 1 cup of tapioca flour
  • 1/2 cup of almond meal flour
  • 1 tsp xanthan gum
  • Sift all of these together so they're well mixed. That's it.
  • Fig and Walnut Gluten Free Tart
  • Here's What You Need:
  • Pastry:
  • 1 and 1/4 cup of all purpose gluten free flour, plus extra for dusting.
  • 1 stick of cold butter
  • 1 tsp kosher salt
  • 2 Tbs sugar
  • 2 to 4 Tbs of ice water
  • Filling:
  • 3/4 cup of walnuts
  • 1/3 cup plus 2 Tbs of sugar
  • 4 Tbs room temperature butter
  • 1 egg
  • 2 dozen large fresh figs
  • An 11 inch tart pan
