Gingerbread Waffles With Lemon Curd Recipe

Ingredients

  • 1 3/4 c. all-purpose flour
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 1 tsp grnd cinnamon
  • 1 tsp grnd ginger
  • 1/4 tsp grnd cloves
  • 3 lrg Large eggs separated
  • 1 1/4 c. lowfat milk
  • 1/4 c. unsulphured molasses
  • 1/4 c. brown sugar - (firmly packed)
  • 1/2 c. butter - (1 stick) melted
  • 1 jar Crosse & Blackwell lemon curd - (12 ounce) heated

Directions

  1. Combine flour, baking pwdr, salt, cinnamon, ginger and cloves in small bowl. Beat egg yolks with wire whisk in medium bowl. Add in lowfat milk, molasses and brown sugar; mix well. Gradually whisk in butter and flour mix.
  2. Beat egg whites in small mixer bowl on high speed till soft peaks form; fold into batter.
  3. Cook in Belgian waffle maker according to manufacturer's directions. Serve hot with curd.
  4. This recipe yields 12 Belgian waffles squares.
  5. Comments: Can also be cooked in standard waffle maker (makes about 24 standard-size waffle squares.)
  6. Yield: 12 waffles
