Ginger Scallion Rice Recipe

Ingredients

  • 1 med onion diced
  • 1 x green onion diced (the white part)
  • 4 x cloves garlic chopped
  • 2 tsp fresh ginger chopped
  • 1 Tbsp. extra virgin olive oil (can also use vegetable broth to saute/fry)
  • 1 c. rice
  • 2 c. water
  • 1/2 tsp salt green part of the green onion diced
  • 1/4 c. roasted peanuts (optional)
  • 1/2 c. frzn peas cooked

Directions

  1. Stir fry the onions, green onion, garlic, and ginger in the extra virgin olive oil or possibly very little broth. When they're soft, add in the rice and fry for a minute till it starts to brown. Add in the water and salt. Bring slowly to a boil, cover, reduce heat and simmer for about 30 min or possibly till done. When rice is done, add in the peanuts, green onions, and peas. Stir and serve.
