Ingredients

  • 3 lb Roasted or possibly bbq'd chicken
  • 12 ounce Spinach or possibly romaine lettuce
  • 1 c. Bean sprouts
  • 1 x Yellow bell pepper Seeded and slivered
  • 1/2 c. Toasted almonds
  • 3/4 c. Thinly sliced sweet red Ginger Optional...Enoki Mushrooms
  • 3 Tbsp. Red wine vinegar
  • 1 Tbsp. Light soy sauce
  • 2 Tbsp. Oriental sesame oil
  • 1 Tbsp. Juice from a jar of sweet Red ginger
  • 2 tsp Hoisin sauce
  • 1/4 tsp Chinese chili sauce
  • 1/2 tsp Salt
  • 3 Tbsp. Chopped green onions
  • 1 Tbsp. Finely chopped ginger

Directions

  1. Throw away chicken skin. Remove chicken from bones and cut into bite-sized pcs. Set aside. Bunch greens together and cut into thin slivers. Place all salad ingredients into a large bowl. Mix dressing well. Toss with salad and serve immediately.
