Ingredients
- 3 lb Roasted or possibly bbq'd chicken
- 12 ounce Spinach or possibly romaine lettuce
- 1 c. Bean sprouts
- 1 x Yellow bell pepper
- Â Â Seeded and slivered
- 1/2 c. Toasted almonds
- 3/4 c. Thinly sliced sweet red
- Â Â Ginger
- Â Â Optional...Enoki Mushrooms
- 3 Tbsp. Red wine vinegar
- 1 Tbsp. Light soy sauce
- 2 Tbsp. Oriental sesame oil
- 1 Tbsp. Juice from a jar of sweet
- Â Â Red ginger
- 2 tsp Hoisin sauce
- 1/4 tsp Chinese chili sauce
- 1/2 tsp Salt
- 3 Tbsp. Chopped green onions
- 1 Tbsp. Finely chopped ginger
Directions
- Throw away chicken skin. Remove chicken from bones and cut into bite-sized pcs. Set aside. Bunch greens together and cut into thin slivers. Place all salad ingredients into a large bowl. Mix dressing well. Toss with salad and serve immediately.
