I spent a little over 5 hours yesterday weeding through that school work! I never envisioned it would take that long, but I guess for three college courses, that makes sense. Max and Hazel said that school work makes them sleepy…

so they spent the majority of time laying in the sunshine, baking their gingerbread.

Parrish had his first soccer game of the season yesterday, so it was supper on your own. AND I was finally a good food blogger, and documented my favorite quick meal:

Over medium low heat, I sauté the veggies with two tbsp. of olive oil, covered, for around 5 minutes. Then I take the lid off and add in 2 tbsp. gluten free tamari

Even if gluten didn’t hate me, I would still use tamari. I LOVE the flavor!

After I add the tamari, I let the veggies continue to cook on medium low without the lid on.

While this is all cooking, get a pot of water boiling, because you’re gonna need NOODLES!!!!

Annie Chun’s Maifun Brown Rice Noodles (I found these at Harris Teeter, but they have them at Whole Foods too)

I LOVE these noodles! You simply boil a pot of water. Once it reaches that boiling point, add in your noodles, and then turn off the burner. You basically just want to ‘soak’ the noodles for about 5 minutes. Then they’re finished!

Once your veggies are tender, the squash is browned, and the tomatoes are wilted, then you’re ready to add in your noodles. And with your noodles, add 2-3 tbsp. of

San-J Gluten Free Teriyaki.

And that’s it!

The great thing about this recipe is that you can add whatever veggies you would like! I have even added tofu in previous bowls.

And the bowl above ^ is actually two servings. After taking the pictures I scooped out half for lunch today!
