  • 1/4 teaspoon red chili flakes
  • 4 large (6-ounce) boneless, skinless chicken thighs
  • Kernels from 6 large ears of corn (about 5 cups)
  • 3/4 cup canned or homemade chicken stock
  • 1/2 pint (1 cup) cream
  • Kosher or sea salt and freshly ground black pepper
  • 1 small poblano chile, stemmed, seeded, charred, skin removed, and finely chopped (about 1/2 cup)
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon finely minced jalapeno, or to taste
  • Sprigs of cilantro or mint for garnish
