German Baked Pancake With Apples Recipe

  • 2 x Large eggs
  • 1/2 c. Egg Beaters 99% Egg Substitute Or possibly Equiv To 2 Whites
  • 3/4 c. All-Purpose Flour
  • 3/4 c. skim Lowfat milk
  • 1/2 tsp Vanilla Nonstick Cooking Spray *Note
  • 3 Tbsp. Honey Light, **Note
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg Grated
  • 3 x Apples, Peeled ***Note

Directions

  1. *NOTE: The original recipe used 1 1/2 Tablespoons light margarine... I used nonstickcooking spray.
  2. **NOTE: Original recipe used 4 Tablespoons light honey for the topping.
  3. ***NOTE: Original recipe used tart apples, peeled and sliced... I used reddelicious, peeled and grated.
  4. For the pancake:Preheat the oven to 450 deg F.
  5. In a bowl, beat the Large eggs, egg beaters (whites), flour, lowfat milk and vanilla till smooth; set aside.
  6. Spray a non stick round 12" baking dish with the nonstick cooking spray.
  7. Put it in the oven to heat for about 5 - 7 min. When the baking dish ishot, remove it carefully and pour in the batter and put it back into the oven for 15 min. After baking for 15 min; lower the temperature to350 deg F and bake for an additional 10 min.
  8. While the pancake is baking for the first 15 min, prepare the apple topping:In a large skillet, combine the honey, cinnamon and nutmeg. Hot over mediumheat till the honey liquefies and mixes with the spices. Add in the apples and heat them till just tender.
  9. The pancake should have puffed dramatically, especially around the sides.
  10. Serve immediately, with the topping, before it settles.
  11. Serves: 4
  12. This has a wonderful flavor.
