Ingredients
- 3/4 c. Sugar
- 2 Tbsp. Flour
- 3 Tbsp. Cornstarch
- 1/4 tsp Salt
- 2 c. Lowfat milk
- 2 x Well beaten egg yolks
- 1 Tbsp. Butter
- 1 tsp Lemon juice
- 2 c. Sliced fresh peaches
- 1 x 9-inch baked pie shell Sweetened whipped cream
Directions
- Mix sugar, flour, cornstarch and salt. Add in lowfat milk slowly and cook over boiling water till mix begins to thicken. Add in well-beaten egg yolks and butter and cook till mix thickens. Add in lemon juice and cold.
- Arrange 1 c. sliced peaches in pie shell. Pour in filling and top with remaining peaches. Refrigeratethoroughly and top with sweetened whipped cream.
