Ingredients

  • 1 lb plum tomatoes peeled, seeded
  • 1 c. cucumber peeled, seeded, and diced
  • 1/2 x jalapeno pepper seeded, diced
  • 1/2 med red onion diced
  • 1/4 bn cilantro minced
  • 1 can tomato juice - (4.5 ounce)
  • 1/2 tsp warm pepper sauce
  • 1/4 tsp salt

Directions

  1. Combine all ingredients in a food processor and blend till smooth. Add in more salt if needed. Chill for 1 hour before serving.
  2. This recipe yields 4 servings.
