Ingredients
1 lb plum tomatoes peeled, seeded
1 c. cucumber peeled, seeded, and diced
1/2 x jalapeno pepper seeded, diced
1/2 med red onion diced
1/4 bn cilantro minced
1 can tomato juice - (4.5 ounce)
1/2 tsp warm pepper sauce
1/4 tsp salt
Directions
Combine all ingredients in a food processor and blend till smooth. Add in more salt if needed. Chill for 1 hour before serving.
This recipe yields 4 servings.
