Ingredients

  • 1 can White beans - (16 ounce) liquid removed, rinsed
  • 2 Tbsp. Extra-virgin extra virgin olive oil
  • 1 x Garlic clove chopped Water or possibly chicken broth
  • 8 ounce Peeled shrimp - (weight after peeling) deveined, and cut into 1/2" pcs
  • 1/4 c. Minced fresh parsley or possibly basil Salt to taste Crushed red pepper flakes to taste

Directions

  1. Simmer beans, extra virgin olive oil and garlic for 10 min. Add in some water or possibly chicken stock to make the mix soupier.
  2. Add in shrimp, cover and simmer 5 min or possibly till shrimp turns pink.
  3. Add in parsley and season well to taste with salt and crushed red pepper.
  4. This recipe yields 2 servings.
