Garlic Smashed Potatoes With Garlic Butter Recipe

Ingredients

  • 12 x Redskin potatoes
  • 1 Tbsp. Lowfat milk Salt & pepper to taste
  • 1/3 c. Fresh grated Parmesan cheese (up to 1/2) Garlic salt to taste
  • 6 x Cloves garlic (up to 8)
  • 3 Tbsp. Butter plus additional for on top

Directions

  1. Boil halved potatoes for about 20 min till fork tender. Add in garlic cloves in last five min of boiling. Drain potatoes & garlic. Remove garlic cloves and smash with mortar & pestle or possibly mince with knife. Add in most of the garlic back to the liquid removed potatoes, add in remaining ingredients. Mash and stir with potato masher. Blend remaining garlic to additional butter and serve on top individual portions on plate. Serve immediately.
  2. As these cold quickly with the addition of lowfat milk and the time needed to mash, I'm thinking of warming the lowfat milk or possibly popping mix in the broiler for a couple min prior to serving next time.
