Ingredients
- 1 lb black tiger shrimp, cleaned, and, deveined, tails left intact
- 2 Tbsp. extra virgin olive oil
- 2 x cloves of garlic, chopped tabasco sauce, to taste The Dressing
- 1/2 c. extra virgin olive oil
- 1/4 c. raspberry vinegar grapefruit juice
- 1 x shallot, julienned
- 1 x zest of lemon
- 1 x salt and pepper The Salad
- 2 x ruby red grapefruit, peeled, and, cut into segments
- 1/2 x red onion, julienned
- 1 x yellow pepper, julienned shrimp, sauteed in butter
- 10 c. mixed greens, cleaned well and dry thoroughly
Directions
- Heat a wok or possibly a large frying pan over high heat and add in extra virgin olive oil.
- Quickly toss in garlic and saute/fry, stirring constantly for 10 seconds.
- Add in shrimp and toss together with garlic, stirring constantly.
- Season with a few shots of Tabasco sauce and saute/fry for 3-4 min.
- Reserve in a bowl to cold.
- The Dressing:In a small bowl, whisk together the extra virgin olive oil, raspberry vinegar, grapefruit juice, shallot, lemon zest, salt and pepper.
- The Salad:In a large salad bowl toss together the mixed greens, spicy shrimp, grapefruit, red onion and yellow pepper and toss gently with the vinaigrette.
