It’s been a pretty awesome summer for sports here in Toronto. The Pan Am games just wrapped up last month, and this week, the Para Pan Am Games and the Canadian Open (aka the Rogers Cup) are both in full swing.

Of course, I’ve been sticking to spectating, mostly because I’m totally hopeless at any form of organized sports.

(Though the world better watch out if the IOC decides to recognize tripping over your own feet as a sport. I’m really good at falling flat on my face. I’d totally own that podium.)

Conveniently enough, this month’s challenge for the Lavazza Passionistas is all about tennis. But since the Rogers Cup doesn’t really have an official food of its own yet, I’m shamelessly borrowing from the granddaddy of all tennis tournaments instead – Wimbledon, that is.

According to the internets, there are several foods that are traditionally associated with Wimbledon, including cornish pasties, afternoon tea with scones and sandwiches, and Pimm’s Cup.

The most iconic dish of all, though, is also the most simple: fresh, ripe strawberries topped with a splash of cream. In keeping with a tradition that’s been around for over 40 years (officially, anyways), Wimbledon-goers literally consume several tonnes of strawberries and thousands of litres of cream cream during the two-week tournament.

Inspired by this combination, I decided to create these simple strawberry parfaits using fresh Ontario strawberries macerated in Pimm’s (because what could be more appropriate than that?) layered with pillowy clouds of freshly whipped cream and crumbled amaretti cookies, as a nod to Lavazza’s Italian roots.

And naturally, it’s absolutely perfect served with a fresh-brewed espresso. I think this just might be the beginning of a beautiful tradition.

Strawberry and Cream Parfaits This easy summery dessert combines two of Wimbledon's classic flavours in a simple layered parfait - Pimm's Cup, and strawberries in cream. Tennis whites entirely optional. Author: Isabelle Boucher (Crumb) Recipe type: Dessert Serves: 4 Ingredients

1 dry pint fresh strawberries, hulled and sliced 2 tbsp sugar 2 tbsp Pimm's No. 1 Cup (optional) 1 cup whipping cream 28 small amaretti cookies Instructions

In a medium-sized mixing bowl, stir together the strawberries with sugar and Pimm's (if using). Let stand for 15 minutes or until the berries are softened and juicy. While the berries are macerating, whip the cream to soft peaks in a large mixing bowl. To assemble, arrange four parfait glasses (or any other pretty glass dish of your choice). Crush three amaretti into the bottom of each glass. Top with a couple spoonfuls of strawberries, and then a generous layer of whipped cream. Repeat the layers again, then finish with a slice of strawberry and an amaretti. Serve immediately. 3.3.3077
