Ingredients

  • 3 lb Chicken
  • 4 x Cloves garlic
  • 1 lrg onion
  • 3 Tbsp. Vegetable oil
  • 1 x Salt
  • 2 Tbsp. Lemon grass, chopped
  • 1 tsp Grnd chilies
  • 4 Tbsp. Fish sauce (nuoc mam)
  • 1 Tbsp. Granulated sugar
  • 1 Tbsp. Caramel sauce (below)
  • 1 c. Water

Directions

  1. (Thai Chicken in Lemon Grass and Chile)
  2. Rinse chicken and dry well. Cut into small pcs. Peel garlic and slice finely. Cut onion into halves lengthwise and then cut lengthwise into 1/2" strips. Heat oil in large frying pan over medium heat. Add in a healthy pinch of salt, garlic and onion. Fry over medium heat till onion becomes translucent/soft. Add in lemon grass and chili. Fry 1 to 2 min till fragrant.
  3. Add in chicken and cook till lightly browned. Add in fish sauce, sugar and caramel sauce. Mix well. Add in 1 c. water and cook 45 min or possibly till chicen is tender. Stir occasionally and add in more water if necessary.
  4. Makes4 servings.
  5. CARAMEL SAUCE: Mix 1/2 c sugar with 4 Tbsp. of water in a heavy saucepan. Bring to a boil over medium heat and let boil till mix changes colour. Turn heat down to low and heat till brown. Add in 1/2 c. water to mix. Stir till sugar is dissolved. Remove from heat and store in a jar in the refrigerator.
