.%20Unsalted%20butter%20is%20melted%20first%20(either%20on%20the%20stove%20or%20in%20a%20microwave)%20and%20then%20sugar%20is%20added.%20The%20mixture%20is%20heated%20once%20again%20and%20this%20heating%20ensures%20more%20sugar%20to%20melt%20and%20gives%20the%20brownies%20a%20nice%20shiny%20crust.%20Once%20the%20sugar%20is%20melted,%20all%20the%20%20other%20ingredients%20go%20in%20and%20then%20it's%20baked%20until%20done.%3C/p%3E%3Cp%3EIn%20the%20original%20King%20Arthur%20recipe,%20the%20brownies%20are%20cut%20into%20cute%20heart%20shapes%20after%20completely%20cooling%20down.%20My%20heart%20cookie%20cutter%20proved%20to%20be%20useless,%20so%20I%20abandoned%20that%20idea%20after%20cutting%20about%20half%20a%20dozen%20hearts.%20I%20simply%20cut%20the%20brownies%20into%20mini%20bites%20because%20it's%20for%20the%20little%20kids%20in%20school.%20Also%20the%20original%20recipe%20had%20a%20ganache%20frosting%20on%20top%20of%20the%20brownies,%20but%20I%20skipped%20that%20step%20too.%20These%20brownies%20are%20great%20just%20as%20is,%20fudgy%20and%20delicious.%20I%20don't%20think%20they%20need%20any%20more%20decorations%20on%20top.%3C/p%3E%3Cp%3EI%20want%20to%20try%20to%20make%20these%20brownies%20without%20eggs%20next%20time.%20I'm%20thinking%20of%20halving%20the%20recipe%20which%20makes%20substituting%20the%202%20eggs%20with%20either%20egg%20replacer%20powder%20or%20flax%20seed%20meal%20more%20easy.%20I%20will%20probably%20use%20a%208%22%20or%209%22%20square%20baking%20pan.%20Will%20update%20my%20findings%20asap.%3C/p%3E%3Cp%3EFudge%20Brownies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ECooking%20Directions:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0F.%20Lightly%20grease%20a%209%22x13%22%20baking%20pan%20with%20cooking%20spray%20and%20line%20with%20parchment%20paper,%20then%20lightly%20grease%20the%20parchment.%20Lining%20with%20parchment%20is%20optional%20but%20recommended%20because%20it%20helps%20in%20getting%20the%20brownies%20out%20of%20the%20pan%20very%20easy.%3C/p%3E%3Cp%3EIn%20a%20medium%20size%20saucepan%20melt%20butter%20on%20low%20heat.%20Take%20off%20the%20heat%20and%20stir%20in%20the%20sugar%20until%20combined.%20This%20can%20be%20done%20in%20the%20microwave%20using%20a%20microwave%20safe%20bowl.%3C/p%3E%3Cp%3EPut%20the%20pan%20back%20on%20heat%20(or%20in%20the%20microwave)%20briefly,%20until%20the%20mixture%20gets%20hot,%20but%20not%20bubbling,%20about%202~3%20minutes.%20The%20mixture%20will%20become%20shiny%20as%20you%20stir%20it.%20Take%20the%20pan%20off%20the%20heat%20and%20let%20cool%20for%20a%20couple%20of%20minutes.%20This%20second%20heating%20ensures%20more%20sugar%20to%20melt%20and%20gives%20the%20brownies%20a%20nice%20shiny%20crust.%3C/p%3E%3Cp%3EThen%20stir%20in%20baking%20powder,%20salt,%20cocoa%20powder%20and%20vanilla%20extract.%20Mix%20well%20to%20combine.%3C/p%3E%3Cp%3ENext%20add%20the%20eggs%20one%20at%20a%20time%20and%20stir%20well%20after%20each%20addition.%3C/p%3E%3Cp%3EStir%20in%20the%20flour,%20espresso%20powder%20and%20chocolate%20chips.%20Make%20sure%20to%20scrape%20down%20the%20sides%20and%20mix%20well%20to%20incorporate%20all%20the%20ingredients.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20baking%20pan%20and%20bake%20for%2025~30%20minutes%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20comes%20out%20clean%20or%20with%20some%20moist%20crumbs.%20At%20this%20point,%20the%20edges%20will%20be%20set%20and%20the%20center%20will%20be%20barely%20set.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20place%20on%20a%20wire%20rack%20for%2020%20minutes.%3C/p%3E%3Cp%3ETurn%20the%20brownies%20out%20onto%20the%20wire%20rack%20and%20peel%20off%20the%20parchment.%20Let%20cool%20completely%20before%20slicing.%20Enjoy!!%3C/p%3E){kind=link}
