  • 3 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 eggs, lightly beaten
  • 1 cup fat-free milk
  • 1/2 cup butter, melted
  • 3/4 cup chopped, peeled tart apple
  • 1/3 cup chopped fresh, frozen, or canned peaches
  • 1/3 cup fresh or frozen blueberries (or mixed berries)
  • Additional fat-free milk, optional

Directions

  1. In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon.
  2. Combine the eggs, milk, and butter; add to the dry ingredients.
  3. Stir in the apple, peaches and berries.
  4. Pour into an 8 inch square baking dish coated with cooking spray. (I use a 9 X 13 pan)
  5. Bake, uncovered, at 350 degrees F for 35 - 40 minutes or until a knife inserted near the center comes out clean.
  6. Cut into squares.
  7. Serve with milk if desired.
