Ingredients
- 1 T plus 1 1/2 teaspoon uncooked pearl tapioca
- Dash of salt
- 1/2 c. water
- 1/2 c. orange juice, no sugar added
- 1/3 c. pineapple juice, no sugar added
- 1 c. strawberries, cut into halved
- 2 med. peaches, blanched, peeled, pitted, and sliced
- 2 sm. oranges, peeled and sectioned
- 2 sm. apples, cored, pared, and diced
- 1/8 med. pineapple, pared and diced
Directions
- In small saucepan put together tapioca and salt; add in water and bring to a boil. Reduce heat to medium-low and let simmer, stirring frequently, till tapioca turns clear, 10-15 min. Add in orange juice and pineapple juice and stir to put together; remove from heat and set aside.In medium bowl, put together strawberries, peaches, oranges, apples, and pineapple; pour tapioca mix over fruits and mix well. Cover with plastic wrap and chill till chilled, at least 1 hour.
