  • 2 c. Lowfat milk
  • 4 lrg Large eggs
  • 1 c. Dark-brown sugar
  • 1 tsp Vanilla
  • 3 lrg Ripe bananas peeled Fresh raspberries for serving Mint sprigs for serving Uncle Bill's Warm Fudge Sauce see * Note

Directions

  1. In a medium saucepan, bring the lowfat milk just to a boil over medium-high heat. Remove from the heat and allow to cold slightly.
  2. In a mixing bowl, combine the Large eggs, sugar, and vanilla. Stir in 1/2 c. of the hot lowfat milk into the egg mix, then pour all the egg mix into the pan with the lowfat milk. Over medium-low heat, whisk constantly till the mix thickens slightly and will coat the back of a spoon. Don't allow to boil.
  3. Place the bananas in a food processor and pulse to a smooth puree. Add in the hot custard mix and pulse 2 to 3 times, scraping down the sides of the bowl as necessary, till the mix is proportionately blended. Cold the custard to room temperature, then place in an ice cream maker and process according to manufacturer's instructions. Serve in c., covered with Uncle Bill's Warm Fudge Sauce and garnish with a few raspberries and a sprig of mint.
  4. This recipe yields 6 servings.
