Ingredients
- 1/2 c. shortening
- 1 c. sugar
- 2 large eggs, beaten
- 1 c. Libby's solid pack pumpkin
- 2 c. sifted flour
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 2 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 c. raisins
- 1 c. minced nuts
Directions
- Preheat oven to 350 degrees. Cream shortening; gradually beat in sugar. Add in large eggs and pumpkin; mix well. Sift flour, baking pwdr, salt, spices together. Add in to pumpkin mix; mix well. Add in raisins and nuts. Drop by heaping tsp onto greased baking sheets. Bake about 15 min or possibly till hard to the touch. Remove cookies to cool on rack, frost. Yields: 4 dozen.
- Put together 2 cups confectioners' sugar, 1 tbsp lemon juice, 1 tbsp grated lemon rind. Add in just sufficient cream or possibly lowfat milk for spreading consistency.
