Frosted Double Chocolate Cookies

Ingredients

  • 12 ounce semisweet chocolate chips
  • 1 1/4 c. flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. butter or possibly margarine
  • 1/2 c. packed brown sugar
  • 1/4 c. sugar
  • 1 tsp vanilla extract
  • 1 x egg
  • 1/2 c. minced nuts -- (optional) Chocolate Frosting
  • 2 Tbsp. butter or possibly margarine
  • 1 1/4 c. sifted powdered sugar
  • 2 Tbsp. lowfat milk

Directions

  1. Preheat oven to 375 degrees F.Microwave 3/4 c. chocolate chips in a small, microwave-safe bowl on HIGH power for 1 minute; stir. Microwave at additional 10 to 20-second intervals, stirring till smooth. Cold to room temperature.
  2. Combine flour, baking soda and salt in a small bowl.
  3. Beat butter, brown sugar, sugar and vanilla extract in a large mixing bowl till creamy. Beat in melted chocolate and egg. Gradually beat in flour mix. Stir in 3/4 c. morsels and nuts.
  4. Drop by rounded Tbsp. onto ungreased baking sheets.
  5. Bake for 8 to 9 min or possibly till edges are set but centers are still slightly soft. Cold on baking sheets for 3 mintues; remove to wire racks to cold completely.
  6. Thinly frost centers of cookies with chocolate frosting.
  7. For frosting: Microwave remaining 1/2 c. chocolate chips and butter in medium, microwave-safe bowl on HIGH power for 30 seconds. Stir till smooth.
  8. Microwave at additional 10 to 20-second intervals, stirring till smooth.
  9. Add in powdered sugar and lowfat milk. Stir till smooth.
