Frito Corn Salad Recipe

This stuff is surprisingly addictive. A co-worker brought it in for us to try and we were all making it that weekend. I have seen lots of different recipes for this, and this is the simplest one and the one that I think tastes the best. It is the one I was first addicted to. Thanks Ashley!

Ingredients

  • large can of Sweet Corn
  • 1 or more cups Shredded Sharp Cheddar Cheese (I use about one and a half cups, very cheesy)
  • 1/2 cup green onions, chopped small
  • 1 cup or more mayonaise
  • 1 - 2 cups Chili Cheese Fritos crushed
  • 1 - 2 cups Chili Cheese Fritos saved back for when you serve it.

Directions

  1. Mix all together in one bowl, adjusting things as you go along.
  2. Cover with Saran Wrap and let it sit overnight in the fridge. The flavors will all meld together into one big bowl of deliciousness.
  3. When you are ready to serve it, give it a good stir and then stir in more crushed Chilli Cheese Fritos for crunch.

      We eat it as it is. It's very filling. And the Fritos take the place of any chip or cracker you would dip with. I have a friend who eats hers as a sandwich, but it doesn't seem to appetizing to me.

        do you use as a dip..or just eat it as is?
