Fried Squirrel With Onion Gravy

Ingredients

  • 5 x dressed squirrels cut serving pcs Flour as needed Salt to taste Freshly-grnd black pepper to taste
  • 4 slc bacon
  • 1 c. peanut oil
  • 1/8 c. flour
  • 1/2 c. water
  • 1/3 c. minced onion

Directions

  1. Season flour with salt and pepper and coat squirrel. Fry bacon in large skillet. Remove bacon and drain on paper towels. Crumble bacon and set aside.
  2. Add in peanut oil to drippings in skillet and heat over medium heat. Add in squirrel pcs and cook till tender. Remove squirrel from pan; drain on paper towels. Reserve 1/8 c. drippings in the skillet.
  3. Make gravy by adding the 1/8 c. flour to the drippings, stirring till smooth. Cook 1 minute, stirring constantly. Gradually add in water, stirring well. Add in onion and cook over medium heat, stirring constantly till thickened and bubbly. Season to taste with salt and pepper and top with bacon crumbs.
  4. Serve for breakfast with warm biscuits, hash browns and muscadine jelly on the side.
  5. This recipe yields 5 - 10 servings.
