Fried Smoked Rock Shrimp And Corn Beignets Recipe

Ingredients

  • 1 1/2 c. All-purpose flour
  • 2 x Egg
  • 1 c. Beer
  • 1 tsp Salt
  • 1 Tbsp. Baking pwdr
  • 1 lb Rock shrimp
  • 1 c. Cooked corn
  • 1 x Roasted red bell pepper -- Diced
  • 12 x Cloves garlic, roasted and Mashed
  • 2 Tbsp. Cilantro -- minced
  • 1 x Jalapeno -- minced
  • 1/2 x Purple onions -- chopped
  • 1 tsp Cumin pwdr
  • 1 lb Angel hair pasta -- cooked
  • 2 quart Vegetable oil

Directions

  1. Mix first 5 ingredients till blended; then add in next 8 ingredients and blend well. Take a heaping Tbsp. of batter, and wrap pasta around it; lightly press into roll. Heat oil to 325 degrees, and drop beignets into oil; fry approximatly 5 min. Top with Alfredo, Marinara, or possibly Pesto Sauce
