- 1/4 cup (2oz, 60ml) Greek yogurt

%20it%20all%20and%20have%20it%20for%20a%20vegetarian%20main%20course.%3C/p%3E%3Cp%3EFried%20Gnocchi%20with%20Creamy%20Mushroom%20Sauce%3C/p%3E%3Cp%3ETotal%20time:%2025%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EHeat%20water%20in%20a%20medium%20pot%20for%20gnocchi.%3C/p%3E%3Cp%3EWhen%20boiling,%20add%20the%20gnocchi%20and%20cook%20just%20until%20they%20all%20float,%201%20%E2%80%93%202%20minutes.%20%20Drain.%3C/p%3E%3Cp%3EHeat%202%20tsp%20oil%20in%20a%20medium%20nonstick%20skillet%20over%20medium-low%20heat.%20Add%20gnocchi%20and%20saut%C3%A9%20until%20light%20brown,%20stirring%20and%20turning%20occasionally,%2012%20%E2%80%93%2015%20minutes.%3C/p%3E%3Cp%3EHeat%20remaining%202%20tsp%20oil%20in%20a%20medium%20skillet.%20%20Add%20shallots%20and%20saut%C3%A9%20until%20tender.%3C/p%3E%3Cp%3EAdd%20mushrooms,%20paprika%20and%20saut%C3%A9%20until%20mushrooms%20start%20to%20brown.%3C/p%3E%3Cp%3EAdd%20mustard%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20stir%20in%20yogurt.%3C/p%3E%3Cp%3EArrange%20gnocchi%20on%20small%20plates.%20%20Spoon%20sauce%20over%20and%20serve.%3C/p%3E%3Cp%3EOur%20local%20farmer%20has%20been%20busy%20playing%20in%20the%20dirt%20again.%3C/p%3E%3Cp%3ELast%20summer%20he%20brought%20in%20a%20big%20backhoe,%20some%20dump%20trucks%20and%20spent%20the%20better%20part%20of%20two%20weeks%20moving%20a%20lot%20of%20dirt%20around.%3C/p%3E%3Cp%3EWe%20never%20knew%20why.%3C/p%3E%3Cp%3EWhen%20he%20was%20all%20done%20playing%20he%20plowed%20the%20field%20and%20planted%20winter%20wheat.%3C/p%3E%3Cp%3EWe%20were%20pretty%20sure%20that%20he%20must%20have%20had%20a%20purpose%E2%80%A6..%20One%20does%20not%20bring%20in%20the%20heavy%20equipment%20just%20to%20play,%20after%20all.%3C/p%3E%3Cp%3EWe%20had%20heard%20rumors%20that%20he%20was%20digging%20a%20lake%20but,%20no,%20when%20he%20was%20done%20it%20was%20just%20a%20regular%20old%20wheat%20field%20that%20looked%20just%20like%20the%20sunflower%20field%20of%20the%20year%20before.%3C/p%3E%3Cp%3ELast%20week%20he%20started%20again.%3C/p%3E%3Cp%3EHe%E2%80%99s%20got%20a%20big%20backhoe,%20a%20dump%20truck,%20a%20bulldozer%20and%20a%20tractor%20%E2%80%93%20dump-trailer.%3C/p%3E%3Cp%3EIsn%E2%80%99t%20it%20cute%20how%20they%20line%20them%20all%20up%20at%20the%20end%20of%20the%20day?%3C/p%3E%3Cp%3EThey%20do%20that%20every%20day%20when%20they%20finish%E2%80%A6.%20All%20nice%20and%20neat.%3C/p%3E%3Cp%3EThis%20year%20we%20have%20been%20told%20that%20he%E2%80%99s%20digging%20a%20lake.%3C/p%3E%3Cp%3EThere%20has%20always%20been%20drainage%20problems%20with%20this%20field%20so%20a%20lake%20seems%20like%20a%20good%20idea%20%E2%80%93%20to%20those%20of%20us%20who%20haven%E2%80%99t%20a%20clue%E2%80%A6.%3C/p%3E%3Cp%3EWe%20still%20can%E2%80%99t%20figure%20out%20what%20he%E2%80%99s%20doing%20though.%20He%20dug%20out%20a%20huge%20area%20and%20moved%20all%20the%20dirt%20to%20the%20other%20side%20of%20the%20field.%20Then%20he%20went%20to%20a%20different%20area%20and%20started%20digging%20a%20really%20deep%20trench.%3C/p%3E%3Cp%3EThere%E2%80%99s%20a%20surveyor%20that%20comes%20periodically%20%E2%80%93%20I%20assume%20to%20keep%20them%20on%20course.%3C/p%3E%3Cp%3EAnd,%20once%20or%20twice%20a%20day%20the%20fuel%20truck%20comes%20to%20give%20them%20all%20a%20refill.%3C/p%3E%3Cp%3EYou%20can%E2%80%99t%20tell%20from%20the%20photo%20%E2%80%93%20but%20the%20fuel%20truck%20pulled%20up%20and%20parked.%20All%20the%20equipment%20stopped%20what%20they%20were%20doing%20and%20raced%20over%20from%20wherever%20in%20the%20field%20they%20had%20been%20working.%3C/p%3E%3Cp%3EAll%20I%20could%20think%20of%20was%20a%20big%20nest%20of%20baby%20birds%20all%20running%20to%20the%20mama%20for%20food%3C/p%3E%3Cp%3EThe%20only%20reason%20to%20spend%20all%20the%20money%20to%20build%20a%20lake%20is%20so%20that%20he%20can%20irrigate.%20Wheat%20and%20sunflowers%20don%E2%80%99t%20need%20it%20but%20corn%20does.%3C/p%3E%3Cp%3EWill%20he%20plant%20corn%20next%20year?%3C/p%3E%3Cp%3EWell%E2%80%A6.%20rumor%20has%20it%20that%20he%E2%80%99s%20going%20to%20plant%20tomatoes%20and%20beetroot.%20I%20haven%E2%80%99t%20noticed%20either%20crop%20in%20the%20area%20before%20so%20we%20may%20be%20witnessing%20something%20new.%20The%20tomatoes%20would%20be%20the%20Roma-type,%20for%20commercial%20canning.%3C/p%3E%3Cp%3EI%20may%20re-think%20my%20own%20garden%20next%20year.%3C/p%3E%3Cp%3EWe%20like%20beetroot%E2%80%A6..%20And%20he%E2%80%99d%20never%20notice%20the%20few%20Romas%20I%20need%20for%20the%20freezer.%3C/p%3E%3Cp%3ELast%20update%20on%20November%2016,%202015%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
