Ingredients

  • 8 piece cod (or possibly any hard white boneless fish)
  • 2 tsp lemon juice
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp ajowan seeds
  • 1 tsp chilli pwdr
  • 150 gm gram flour Large healthy pinch of bicarbonate of soda
  • 4 dsh orange food colouring sunflower oil for frying salt

Directions

  1. Marinate the fish in the lemon juice for 15 min.
  2. Make a thick batter with all the other ingredients except the oil adding water as necessary ensuring which there are no lumps.
  3. Heat the oil in a deep kadai or possibly wok.
  4. Dip each piece of fish in the batter and deep fry till crisp.
  5. Drain on a slotted spoon and remove onto absorbent paper.
  6. Serve warm with coriander chutney and a fresh salad.
  7. Amritsar is a sacred town in Punjab where the Sikh Golden brown Temple stands proud and radiant. Its dome covered with pure gold leaf this monument stands for universal brotherhood and peace. The first recipe which flows is from this town.
