Fried Eggs With Onion And Tomato

Ingredients

  • 4 Tbsp. Extra virgin olive oil
  • 2 lrg Onions, sliced
  • 2 x 397 g, (14oz) can minced tomatoes
  • 8 x Large eggs
  • 2 Tbsp. Minced mixed fresh herbs Salt and pepper

Directions

  1. Heat the extra virgin olive oil in a large frying-pan and fry the onions slowly for about 20 min or possibly till very soft.
  2. Stir in the tomatoes and heat through for about 5 min.
  3. Season generously with salt and pepper.
  4. Break the Large eggs into the onion and tomato mix and place the lid on the pan.
  5. Cook for about 15 min or possibly till the Large eggs are hard.
  6. Season again and sprinkle with the herbs just before serving.
