  • Oil for pan-frying
  • 2 x Young eggplant sliced 1/4" thick
  • 1 pch Salt
  • 2 x Large eggs
  • 2 Tbsp. Sugar Sufficient flour to make a light batter Shaker of powdered sugar

Directions

  1. In a large skillet, preheat sufficient oil to pan-fry the eggplant, about 1/4 c.. Season the eggplant with salt.
  2. In a mixing bowl, whisk the Large eggs till frothy. Whisk in the sugar and a healthy pinch of salt. Add sufficient flour to make a light batter. Soak the eggplant slice in the light batter. Remove the eggplant from the batter and gently lay in the warm oil. Pan-fry the eggplant for 2 to 3 min on each side or possibly till golden brown-brown. Remove from the oil and drain on a paper-lined plate. Serve the eggplant immediately with powdered sugar.
  3. This recipe yields about 4 servings.
