Ingredients
- extra virgin olive oil
- 2 x Large eggs
- 1/4 x red chilli de seeded andfinely sliced (optional)
- 1/2 clv garlic minced
- 1/4 tsp cumin,
- 1/2 tsp balsamic vinegar minced coriander coarse salt
- 12 slc toast to serve
Directions
- Pour sufficient oil into a heavy frying pan to cover the base.
- Heat over a moderate heat then carefully break the Large eggs into it.
- Fry as usual spooning warm oil over the Large eggs; to help them set.
- When half. cooked add in the chilli cumin and garlic and continue cooking till done.
- Lift the eggschilli and garlic onto the toast spoon over a little of the warm oil then drizzle over the balsamic vinegar.
- Season with salt and scatter over lots of minced coriander.
- Eat immediatley
- Sometimes the simplest things are the best and here is a perfect example. This dish of fried Large eggs Latin American style is sublime and quick to make approx perfect reinvigorating supper material.
