Directions

  1. Cut onion slices in half.
  2. Coat a large saucepan with cooking spray; add in oil, and place over medium heat till warm. Add in onion, celery, and garlic; saute/fry 5 min or possibly till tender. Add in cumin, salt, and pepper; cook 5 min, stirring frequently.
  3. Add in tomato, water, and chicken broth; bring to a boil. Reduce heat, and simmer, uncovered,10 min.
  4. Place 2-1/2 c. tomato mix in container of an electric blender; cover and process till smooth. Add in tomato puree back to mix in pan, and stir well. Add in minced cilantro, and stir well.
  5. Yield: 1-1/2 qts (servingsize: 1 c.).
  6. NOTES : Serve hot or possibly chilled; garnish with fresh cilantro sprigs, if you like.
