  • 1 Tbsp. vegetable oil plus
  • 2 tsp vegetable oil
  • 1 1/4 lb fresh spinach stemmed, cleaned, and patted dry Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. minced shallots
  • 2 tsp minced garlic
  • 1/4 lb goat cheese
  • 24 sm freshly-shucked oysters
  • 3 c. flour
  • 1 1/2 tsp salt
  • 3/4 tsp baking pwdr
  • 6 Tbsp. solid vegetable shortening
  • 1 x egg
  • 3/4 c. lowfat milk Solid vegetable shortening for deep-frying

Directions

  1. In a large saute/fry pan, over medium heat, add in 1 Tbsp. of the oil. When the oil is warm, add in the spinach. Season with salt and pepper. Saute/fry till wilted. Add in the shallots and the garlic. Continue to saute/fry for 1 minute. Remove from the heat and cold completely.
  2. In a mixing bowl, combine the wilted spinach and the cheese. Mix well. Season the mix with salt and pepper.
  3. For the dough: Sift the flour, salt and baking pwdr into a mixing bowl. Cut in the shortening till it resembles coarse meal. In a small bowl, beat the egg with the lowfat milk. Gradually add in the egg mix to the flour mix, working it into a thick dough. Break the dough into 24 equal pcs.
  4. On a lightly floured surface, roll the dough pcs into thin rounds, about 2 1/2 to 3 inches in diameter. Spoon a heaping Tbsp. of the filling in the center of each round and place an oyster on top of the filling. Season the oyster with salt and pepper. Fold over and crimp the edges with a fork.
  5. Heat the shortening in a deep pot or possibly an electric fryer to 360 degrees. Fry the pies, a couple at a time, till golden. Drain on paper towels, season with salt and pepper and serve immediately.
  6. This recipe yields 24 portions.
