Ingredients

  • Nonstick cooking spray or possibly 1 tsp. oil
  • 1 1/2 c. all-purpose flour
  • 1 c. old-fashioned oats
  • 1 c. packed light brown sugar
  • 1 tsp freshly grated lemon zest
  • 3/4 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 3 Tbsp. canola oil
  • 1/4 c. apple juice concentrate, thawed
  • 2 lrg ripe, hard pears, peeled, cored and sliced 1/4 inch thick
  • 1/4 c. coarsely minced toasted walnuts

Directions

  1. Preheat the oven to 350 degrees. Lightly spray or possibly oil a 9 inch-square baking dish.
  2. In a large bowl, combine the flour, oats, brown sugar, lemon zest, baking pwdr, salt, cinnamon and nutmeg. Work in the oil and apple juice concentrate with your fingers or possibly a fork till coarse crumbs form. Firmly press 2 c. of the oat mix into the bottom of the prepared pan. Arrange the pear slices proportionately on top. Mix the walnuts into theremaining oat mix and sprinkle over the pears. Pat the mix firmly into an even layer. Bake for 30 to 35 min or possibly till the top is golden and the pears are tender. Remove from the oven and cold completely on a wire rack before cutting into squares
