  1. In saucepan combine sugar, cornstarch and salt. Add in water and peaches and bring to a boil. Boil 1 minute. Add in lemon juice and cold. Heat oven to 450 degrees. Put peaches into pastry shell. Cover with crumbs. Bake in preheated oven for ten min then reduce heat and bake 20 min more at 375 degrees.
  2. For the topping, using your fingers...Mix flour butter and sugar till they are fine crumbs. Spread proportionately over peach filling in unbaked pastry shell.
