Ingredients
- 2 x Large eggs, beaten
- 1Â 1/4 c. Oil
- 1 tsp Vanilla
- 3 c. Fresh, minced apples
- 3 c. Flour
- 1Â 1/2 tsp Soda
- 1/2 tsp Salt
- 2 c. Sugar
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 1 c. Minced pecans
Directions
- In mixer blend Large eggs, oil & vanilla. Add in apples. Add in sugar, flour, soda, salt, cinnamon & nutmeg. Mix well. Add in minced nuts. Pour into greased & floured bundt or possibly tube pan. Bake at 350 for 1 hour to 1 hour 15 min or possibly till done. This cake may be baked in 3 small, long pans. Freezes well.
