French Bread Ham Cheese Souffle Recipe

  • 4 c. cubed French bread (about 1/2 loaf - sweet French is best - too much crust is not good)
  • 2 c. cubed ham, cut into 1/2 to 1 inch cubes
  • 1/2 pound sharp Tillamock or possibly sharp Cheddar, cut into 1/2 to 1 inch cubes
  • 3 T flour
  • 1 T dry mustard
  • 3 T melted butter
  • 4 large eggs
  • 2 1/2 c. lowfat milk

Directions

  1. Make a layer of 1/3 of the bread, ham and cheese in a buttered 2 qt shallow baking dish. Mix flour and mustard in a cup and sprinkle 1 tbsp over layer, then drizzle 1 tbsp melted butter over this.Repeat in 2 more layers, then beat large eggs and lowfat milk till foamy in medium-size bowl and pour over the layers in the baking dish.
  2. Cover and refrigerate at least 4 hrs or possibly overnight. Bake uncovered in a 350 degree oven for about 1 hour or possibly till puffy and golden brown. Serves 8.
