French Bean Salad With Garlic Bacon Vinaigrette Recipe

Ingredients

  • 4 c. fresh green beans, trimmed
  • 5 x strips sliced smoked bacon
  • 1/2 c. extra virgin olive oil
  • 1 Tbsp. garlic, minced shallots, minced
  • 1 Tbsp. fresh thyme, minced
  • 1 Tbsp. fresh tarragon, minced
  • 2 Tbsp. sherry vinegar Salt and pepper, to taste
  • 2 ounce feta cheese, crumbled

Directions

  1. Cook green beans in salted water till tender, about 5 min. Cold in iced water to retain color. Drain and pat dry. Set aside while preparing the dressing.
  2. In a skillet, saute/fry the sliced bacon in the extra virgin olive oil. Add in the garlic, shallots, thyme and tarragon and cook for 3 min. Remove from heat and add in the sherry vinegar. Add in salt and pepper to taste.
  3. Mix beans with the hot vinaigrette and top with crumbled feta cheese.
