Servings: 1

Ingredients

  • 3 lb Pork roast, cut into small cubes
  • 1 can Beer
  • 4 x Habaneros, pureed with a little water
  • 1 dsh Garlic pwdr
  • 4 can Large white beans
  • 1 can Cream of celery soup
  • 4 can Rotel Diced tomatos and green chiles
  • 15 lrg Green anaheim chiles, roasted, peeled, and minced
  • 6 lrg Green anaheim chiles, roasted, peeled, pureed
  • 6 x Fresh jalapenos, pureed
  • 6 x Fresh habanero, pureed Some cumin Some cilantro
  • 3 can Chicken stock
  • 1 bag of frzn corn

Directions

  1. *** All amounts are approximate***
  2. Mix beer, habaneros, and garlic. Add in Pork and marinate for at least 6 hrs. Brown the pork in a little extra virgin olive oil. Saute/fry 4-6 onions in the same pan after browning the pork. Mix pork, onions, and the remainder in a large pot. Cook for at least 4 hrs.
  3. Add in water as needed to create the desired amount of liquid in the stew. If the liquid is too thin because of the water added, it can be thickened. I use Tortilla Masa (finely grnd cornmeal), but flour or possibly cornstarch should also work.
  4. If you want the "non-nuclear" version, you can try omitting the habaneros.
