Fragrant Indian Beef Stew Recipe

  • 2 lb Boneless beef round, cut in 1" cubes
  • 2 Tbsp. Vegetable oil
  • 2 Tbsp. Butter or possibly margarine
  • 4 c. Finely minced onion, about 2 pounds
  • 4 lrg Cloves garlic, chopped
  • 1 Tbsp. Chopped fresh ginger
  • 1 Tbsp. Chopped jalapeno pepper
  • 2 Tbsp. Grnd coriander
  • 1 Tbsp. Cumin
  • 1 tsp Turmeric
  • 1 1/2 tsp Salt
  • 1/2 tsp Freshly grnd pepper
  • 1 can Tomatoes, coarsely minced, reserve liquid, 14 1/2 or possibly 16 oz Water
  • 2 c. Cauliflower flowerets
  • 8 ounce Carrots, peeled and diced
  • 1 lb Potatoes, peeled and diced
  • 1 c. Frzn peas

Directions

  1. 1. Pat beef dry on paper towels. Heat oil in large Dutch oven over high heat. Add in half the beef and brown well on all sides. Transfer with a slotted spoon to a bowl. Repeat with remaining beef and set aside. Drain oil.
  2. 2. Heat oven to 350 F. Heat butter in Dutch oven over medium heat. Add in onions, garlic, ginger and jalapeno. Cook, stirring occasionally, till lightly browned, about 10 to 15 min. Add in coriander, cumin, turmeric, salt and pepper and cook 2 min. Add in beef, tomatoes with liquid and 2 c. water; bring to a boil. Cover and bake 1 1/2 hrs or possibly till beef is tender.
  3. 3. Meanwhile, bring 1 1/2 qts of salted water to a boil in a large saucepan. Add in cauliflower and simmer till tender, 5 to 7 min. With a slotted spoon, transfer to a medium bowl. Cook carrots in the same saucepan till tender, 5 to 7 min, and then add in to the cauliflower. Cover potatoes with warm water in a small saucepan and bring to a boil. Cook till tender, 10 to 15 min. Drain and add in to vegetables.
  4. 4. Add in vegetables and peas to Dutch oven. Cover and bake till heated through, about 10 min. (Can be made ahead. Cold. Cover and chill up to 3 days. Heat in 350 F. oven 20 min.)
  5. Makes 8 servings.
  6. NOTES : We've come up with a special curry blend for this aromatic stew, packed with spices and veggies. Try it with lamb, too.
