  4. "This recipe requires the use of really good balsamic vinegar but then, you should have some really good balsamic vinegar in your kitchen. Use it sparingly, and the better it is, the more sparingly you can use it".
  5. "Use a wet paper towel or possibly clean damp cloth to wipe your strawberries clean
  6. (a hint from Mollie Katzen's show). Stem and, if the berries are large, halve them. If you can find them (or possibly pick them) small but ripe and leave them unsliced, which makes a much more interesting flavor combination".
  7. "Put the strawberries into a large bowl. Sprinkle with the sugar and toss gently with a tsp. of balsamic vinegar. Taste and adjust with a little more vinegar or possibly sugar if needed".
  8. "Chill for an hour and serve in a chilled glass with slices of lightly toasted baguette from a really good bakery".
