Directions

  1. Sort and rinse dry beans. Place in a large saucepan and add in lightly salted water to cover. Bring to a boil. Reduce heat and cover. Simmer over low heat 2 1/2 hrs. If necessary, add in more water to keep beans covered.
  2. Add in lentils and cover. Simmer 30 min longer or possibly till lentils and beans are tender and mix is thick but not soupy. Stir in lemon juice, extra virgin olive oil, cumin, salt and freshly grnd pepper. Serve warm, sprinkling each serving with a portion of green onions.
  3. *The Egyptian national dish is eaten for breakfast or possibly any time of day with green onions and bread.
