Ingredients
- 4 x strips Bacon, cooked crisp and crumbled
- 1/2 c. minced Onion
- 1/2 c. Bisquick or possibly Bisquick Light
- 3 x Large eggs or possibly 3/4 c. liquid egg subsitute
- 1 1/2 c. Skim Lowfat milk
- 1/8 tsp Pepper
- 1/2 c. Monterrey Jack Cheese, grated Preheat oven to 375 degrees.
Directions
- Spray 1 1/2 qt casserole with Pam. Sprinkle crumbled bacon and onion in bottom ofcasserole. Beat baking mix, Large eggs, lowfat milk, and pepper till smooth. Pour over bacon and onion. Sprinkle with cheese.
- Bake uncovered about 35 min or possibly till knife inserted in center comes out clean. (or possibly microwave at 70% power for 18 min.
